- 1 x cup uncooked Arborio rice (Risotto rice)
- 2 x cups water
- 1 x 250ml full cream milk
- 1 x 250ml cream
- 2 teaspoons vanilla essence
- 1/4 teaspoon salt
- 2 table spoons honey
Combine all the ingredients in a large pot and simmer at the lowest heat for 30 minutes while taking care not to let the mixture boil over and end up on the stove. Once the rice is soft and the pudding is thick and creamy pour into serving dishes and add some cinnamon or honey or fruit of your choice. Alternatively chill in the fridge and then serve cold.
